Crockpot Freezer Meals: Fill the Bag Now, Dinner Cooks Itself Later

By Master Modules Cozinha editorial team · Updated

Pot roast with carrots in a deep serving dish

Crockpot freezer meals are dinners you assemble in a bag now, freeze, thaw in the refrigerator overnight, and tip into the slow cooker in the morning. The work happens once, on a day you choose. The slow cooker does the rest while you are at work, at practice, or finally sitting down.

This guide covers how to build the bags, which dishes work best, how to thaw safely, and where a freezer meal plan with a printed shopping list saves you the most time.

Why slow cooker dishes are made for the freezer

A slow cooker rewards the same things a freezer does: tougher cuts of meat, liquid, long gentle heat, and sauces that taste better after they sit. Chuck roast, pork shoulder, chicken thighs and bone-in pieces hold up to both. That overlap is why pot roast, pulled pork and shredded beef are some of the most freezer-friendly dishes there are.

There are two ways to do it, and it helps to know which you want:

  1. Raw "dump" bags. You combine raw meat, vegetables and sauce in a freezer bag, freeze it, then cook it from thawed.
  2. Cooked and portioned. You cook the dish once, cool it, portion it and freeze it to reheat. The slow cooker is how it was cooked, not how it is served.

Dump bags are fast to build. Cooked portions give you dinner in 10 minutes. Many households use both.

How to build a crockpot freezer bag that works

  1. Label the bag first. Write the dish, date and cooking instructions on the bag before it is wet or cold.
  2. Add the sauce and aromatics. Put in the liquid, onions, garlic and spices.
  3. Add the meat. Place it on top of the liquid so it is coated.
  4. Add vegetables that can take hours. Carrots, onions, celery and potatoes in large pieces.
  5. Press the air out and flatten. A flat bag freezes fast and thaws evenly.
  6. Freeze flat on a tray, then stack.

Keep these out of the raw bag and add them at the end: pasta, rice, cream, cheese, fresh herbs, and delicate vegetables like zucchini or peas.

How to thaw and cook safely

Move the bag from the freezer to the refrigerator the night before, about 8 to 12 hours. Then empty it into the slow cooker and cook on low until the meat is fully done and hot. Do not put a solid frozen block in a slow cooker, because it takes too long to come up to temperature. If you forget to thaw, set the sealed bag in a bowl of cold water, changing the water every 30 minutes, until it is pliable.

Chicken and ground meats must reach 165 °F in the center. Use an instant-read thermometer rather than guessing from color.

Slow-simmered recipes that freeze especially well

These come from the Sunday Freezer collection and work well with a slow cooker, the stove or the oven:

Each recipe card lists the freezer container, the months it keeps, the thaw method and the reheat time, so you never have to guess.

Chicken in the crockpot, specifically

Chicken is the most popular slow cooker protein and the easiest to get wrong. Boneless breasts dry out when cooked for a full day, so use thighs when you can, and check the temperature earlier than a recipe says. For a freezer bag, chicken thighs with salsa and beans, or with tomato, garlic and herbs, are forgiving. Shredded chicken in sauce is the best cooked-and-portioned option: one cooking session fills six or more dinners' worth of fillings. See freezer meals with chicken for more.

Use a plan and a grocery list, not a hunch

Most failed crockpot prep days fail at the store. You get home missing two ingredients, or you have bought for six recipes and have room for four. The way out is a plan with its shopping list already worked out. Sunday Freezer · 12 Dinners in 1 Hour Meal Plan System includes 12 printable freezer meal plans, each with a shopping list and assembly steps, plus the Freezer Plan Builder web app that builds a combined list from the plans you choose. Read how to build a freezer meal plan with a grocery list for the full approach.

A sample crockpot prep day

  1. Make the shopping list from three dishes, say pot roast, shredded chicken and pulled pork.
  2. Shop once. Choose chuck roast and pork shoulder in family packs.
  3. Start the roast first, because it has the longest cook.
  4. While it cooks, season and bag the chicken.
  5. Cool each dish within 2 hours in a shallow pan.
  6. Portion into flat bags and 2-cup containers, label them, freeze flat.

You end the day with enough for several weeks of weeknights, plus leftovers for lunch on the day you cook.

The best crockpot night is the one where you spend five minutes and the house smells like dinner at 5:30.

Frequently asked questions

Can I put frozen crockpot freezer meals straight into the slow cooker?

Thaw the bag in the refrigerator overnight first. A solid frozen block spends too long in the unsafe temperature range before it heats through.

How long do crockpot freezer meals last in the freezer?

Raw bags and cooked dishes both keep best for about 3 months at 0 °F, with a clear label so you use the oldest first.

What should I not put in a crockpot freezer bag?

Pasta, rice, dairy and delicate vegetables. Add them near the end of cooking so they do not turn mushy.

Do I need a slow cooker to use these recipes?

No. Slow-simmered dishes such as pot roast, shredded beef and pulled pork also work on the stove or in the oven, and each Sunday Freezer recipe lists its reheating method.
