Vegetarian Freezer Meals: Make-Ahead Dinners That Reheat Well

The vegetarian dishes that freeze best are the ones with their own sauce or filling: baked eggplant parmesan, filled crepes, baked pasta, bean burritos, bean soups and stews. They come out of the freezer tasting like dinner, not like a compromise.
Vegetarian freezer cooking has one big advantage: beans, pasta and vegetables are inexpensive, and most of them are happy to wait. It also has a few traps, like watery vegetables and soggy tortillas, which this guide shows you how to avoid. Examples come from the Sunday Freezer recipe collection.
Baked dinners that feel like an occasion
- Baked Eggplant Parmesan. Serves 8 and keeps 3 months. Bake the slices rather than frying so the breadcrumb coating does not turn soggy after the freezer. Freeze in foil pans with lids. Reheat covered at 350 °F for 30 minutes, until bubbling.
- Spinach and Ricotta Crepes. Squeeze the cooked spinach very well, because extra water ruins the filling. Freeze two crepes with sauce per tray and bake covered at 350 °F for 35 minutes. Keeps 2 months.
- Ricotta Cannelloni in Tomato Sauce. Make-ahead pasta at its best.
- Potato Gnocchi in Marinara. Gnocchi frozen in sauce hold up better than plain ones and do not stick. Reheat gently in a saucepan with a tablespoon of water.
Bean dishes: hearty and economical
Beans are the vegetarian freezer's secret. They are filling, cheap and happy in a bag.
- Pinto Bean and Vegetable Soup. Make it thicker than you want, because beans soak up liquid in the freezer.
- Chickpea and Vegetable Soup. Leave some chickpeas whole and mash others so the broth keeps its body after thawing.
- Garden Minestrone. Never freeze the pasta inside the soup; cook it fresh.
- Bean and Cheese Burritos. Cook the beans until almost dry, then roll tight. Microwave 1 minute 30 seconds, or air fry at 350 °F for 10 minutes.
- Black Bean Sipping Soup.
Soups with a creamy side
- Butternut Squash Soup with Ginger.
- Sweet Corn Cream Soup.
- Cheesy Broccoli Cream Soup.
- Cauliflower Soup with Roasted Garlic.
Freeze in 2-cup deli tubs or flat bags. Reheat covered in a pot over medium heat for about 8 to 12 minutes, stirring. Cream soups sometimes separate a little; a vigorous stir or a quick blend brings them back.
Lunchbox and snack bites
For school and work lunches, vegetarian bites are easy wins:
- Broccoli Cheddar Bites and Zucchini and Ricotta Bites, air fryer friendly.
- Cheese and Tomato Mini Quiches and Spinach and Ricotta Mini Quiches.
- Mini Bean and Cheese Burritos.
- Baked Rice and Cheese Patties.
- Baked Cheese Sticks.
They go into the lunchbox frozen and thaw by midday.
Breakfasts and sweet things
Vegetarian breakfasts are plentiful: pancakes, waffles, French toast, oatmeal cups, mini frittatas and muffins. For ideas and reheat times see freezer breakfast meal prep.
Sides and bases
Vegetarian sides turn into mains with the right partners:
- Fluffy White Rice in Freezer Portions and Lentil Rice with Caramelized Onions.
- Creamy Parmesan Polenta.
- Mixed Roasted Vegetables, Roasted Sweet Potato Cubes, Blanched Broccoli Portions.
- Creamy Buttery Mashed Potatoes.
Freeze rice flat in portions and use within 2 months. Combine rice, beans and roasted vegetables for a bowl in 5 minutes.
Three rules for vegetarian freezing
- Squeeze out the water. Spinach, zucchini and eggplant release liquid. Squeeze, salt and drain, or roast first.
- Keep fillings slightly dry. Burritos and crepes need a thicker filling than you would serve fresh.
- Add the delicate parts later. Fresh herbs, a squeeze of lemon, cheese on top, and pasta in soup all go in at reheating.
Also, cool everything within 2 hours before freezing, and reheat to 165 °F in the center when the dish contains egg, rice, pasta or beans.
A vegetarian prep afternoon
- Start the soup first, because it takes the longest.
- Salt and roast the eggplant slices while you make the sauce.
- Fill the crepes and assemble the eggplant parmesan.
- Make the burrito filling and roll.
- Cool, portion, label and freeze flat.
You finish with a soup, a bake, a handheld and a pan of crepes, which is a week and a half of dinners for four, or a month for two.
## Make-ahead sauces and fillings worth having
Beyond finished dishes, three building blocks make a vegetarian freezer flexible:
- A big pot of tomato sauce. Use it on pasta, in cannelloni, on eggplant, over polenta and in shakshuka-style eggs.
- Seasoned beans. Freeze in their cooking liquid in 2-cup portions. They become burritos, soup, chili, or a side in minutes.
- Sautéed onions and peppers. Cooked down and frozen flat, they add sweetness to nearly any dish.
Keep each in a flat bag, label it with the date, and pull one out whenever you need a head start. Spend one afternoon on the three and you can build a new dinner from the freezer on any night, without a recipe.
Getting protein and fullness without meat
Vegetarian dinners satisfy when they have body. Pair beans with rice, put ricotta or cheese in the filling, add lentils to a rice dish, or top soup with a toasted cheese sandwich. Eggs are generous helpers too: frittatas, omelet squares and egg wraps all freeze well and make quick dinners as well as breakfasts. Build each week around two bean dishes, one cheese-based bake and one egg item, and nobody leaves the table hungry.
Feeding a mixed household
Many families have one vegetarian and several meat-eaters. The freezer helps. Keep the vegetarian main in 2-serving portions, so the one person who needs it can pull a bag without cooking separately. For the rest, freeze a meat dish with the same sides, such as rice and roasted vegetables, so one pot of rice serves everyone. Label the vegetarian bags clearly, with a "V" in the corner, so a tired person never has to guess.
